I’m thoroughly impressed with Renae and the team she pulled together to serve for the Henrys Hog Hauler. She planned and coordinated the whole thing. One hell of a job. They all worked their butts off in the heat. Came home exhausted, clean up, just to do it again the next day.
Bo was Mr Backup. If you know you know. This person is key in any roll. From making sure the day to day operations are handled, to getting the catering put together, to prepping food for the next shifts in Greenwood. Once that was all done, he himself came down and backed up Renae at the Food truck. I’m grateful for his solid partnership in this business. He has been a rock for me in a lot of situations and is very much like a brother.
Henry’s has a great team, I’ll even say the best team around. We all pull together and help each other. We are masters of support. Bo and I couldn’t ask for anything more.
As for the competition side of it, we placed a dismal 61st. No one to blame but myself. First competition I’ve done in three years, zero practice and my head just wasn’t in the game. I’ve had much better cooks. My chicken was not on point and lazy. The ribs, they were great, pork I over cooked, brisket I still can’t explain but was dry. The judges agreed. It is what it is, I’ll do better in the next one.
